Well this was done on custom built insulated water smoker that I used for 8 years while on the comp bbq circuit. It was injected with sweet swine brine and the rub is okie dust. That gives it the beautiful color and a great tasting bark. Smoked for 7 hours(170) then wrapped to finishing temp of 200. Rest for 45 minutes to a hour in a hot box
