    Liberally rub with yellow mustard
    2 Tablespoons coarse Kosher salt
    2 Tablespoons coarse ground black pepper
    2 Tablespoons garlic powder
    1/2 Bag coarse grain Kona coffee grinds

    Smoke:
    12 hours w/mesquite at 220 degrees F
