Roasted Duck

The boat is away for the season. So on Sunday I made another special dinner for the my lovely wife. It was roasted duck rubbed with salt, pepper and sweet paprika, cooked over a bed of red oranges and apple juice, and finished with a hoisin glaze, served with slow roasted small potatoes cooked in duck fat with broccoli for the vegetable. It was accompanied by a 2016 bottle of "The Stick" from the Candlestick Ridge Vineyard of Howell Mountain Napa Valley.

I love smoke bacon. Did you slice and freeze it or eat it all at one setting. I think I would eat it all in one setting.

Sliced it (by hand), which is a lot of slicing! Packaged in 11/2 lbs packages, then froze. My boss wanted some for hunt camp, so I am bartering some, so I can hunt on his property! Bacon makes the perfect currency!
