Yes, stone crabs you only harvest the claw(s). Technically you can harvest both claws but it is frowned upon. The crab has a better chance of survival if you leave one claw intact.

Blue crabs you harvest and eat the whole crab.

Do you sometimes take the cutter? Or only the crusher? It looks like a mix of both. Or taking the larger of the two is the norm?

Depends. The claw must be 2.75 inches long in order to be harvested. Some times the crabs caught will only have 1 claw and in that case the crab is thrown back without taking a claw.

A crab that has never been caught will have both claws the same size. If a crab has 2 different size claws it is because it has been caught before and someone harvested a claw and threw it back. In that instance, the larger of the 2 is usually harvested assuming the smaller claw is fully developed and functional.

The reason for the size difference is somebody took the smaller one previously.
