Nice! I never have smoked but as slow cooked as i can with hardwood lump charcoal is awesome! It's great when you can taste the wood!

Side note, anyone ever make their own charcoal? Been looking for a good container to do it in. I have a ton of oak laying around, hickory, locust and my buddy has some pear trees that are nearing the end that i have been eyeing up. I think it would be cool to make some small batches when i do some of my fall cleanup this year

I have not I always use Ozark oak in my cooks that I use my comp cooker. My cooker I have at the house is a Yoder 640 pellet cooker. I'm lazy at home and I done get the amount of smoke that I do on my other cooker. It's to big though, although I don't have to babysit it. It takes a lot of effort to get setup. I love cooking with lump as it's so easy to keep your temp. Get a Weber charcoal starter fill it. Wad some newspapers up really tight light it and set it in a safe place and it voila you have instant coals.

Now I just flip a switch and set the temp. We cook everything from pizza at 600 degrees to smoke brisket.

Ha! I have the gas 2 coal grill and it works great! Use propane to light the coal, and boom! I get it lit, turn off burners, and let the charcoal slow burn just checking a bit and it makes some awesome meat but certainly not smoked. Usually takes about 45 minutes.

This was last night. I love Surf n Turf, in this iteration it is Spinney Creek Oysters and marinated Sirloin Tips on the grill. The Mignonette sauce Willow made was great. Added a baked Potato. GOOD EATS!
