Just wrapped. It’s at 149F now will pull it at 198-200F to rest for a bit then tear into it!!! Another couple hours or so! Apparently I forgot to click post last night. lol
Well, funny you should ask... I put it on @275 for 5ish hours then wrapped in pink butchers paper.... after that I don't know. I ended up falling asleep and woke up at 0400 this morning in a panic!!! It ran out of pellets sometime last night and shut off. When I pulled it this morning it had cooled down pretty good but the blade bone still had quite a bit of heat in it. It still turned out good though, the meat wasn't overcooked and mushy like I was afraid it would be, the only thing that got messed up was the bark which turned out a little more "chewy" than normal which some people like anyway.
