Is it possible to add a ladder to the other side of the rear deck? My ladder is currently below where the fatsac is at and makes It hard to get back on. I would like to run dual ladders to help out.

Most likely you could, but adding a ladder to the sides will interfere with your wakebooster, yes?
You should be putting your deck fatsac on the surf side too, not right in the middle. Get the boat all the way listed to the surf side and you'll have an incredible wave. That'll give you a little room to "scooch" around it when reboarding.

190 series have the ladder on one side due to single engine. I had to stop and think about that question for a second as well, since all dual engine Yamaha boats have a central ladder.
