I was ,“imagining” my way around the globe, searching for inspiration. One idea popped into my head: Cajun meets Italian! I had Andouille sausage, and I was wondering, what could I make? Jambalaya and Risotto are two of my absolute favorites. So, I was curious to see what they would taste like if I mixed them together. I actually found a recipe that combined them, so I decided to give it a shot. It was good (though not spectacular), but I’m not sure I’d make it again. The reason is that I think it takes away from the special qualities of each dish when they’re made separately.DSC01689.jpegDSC01690.jpeg
 
Another variation that turns our really nice is with orzo pasta.
