Never!....I had a delicious Saison sitting in the keg carbonating while I was in Bahrain for 3 weeks. I left it at 10PSI...Thought it might overcarbonate but when I got back it needed one day at 25psi to be just right. I MAY have a slight headache this morning from having one too many of it last night. It came out at 7.5% so you have to be careful. I guess 5 was too many.
