Is there any kind of coating on the jet nozzles? I'm wanting get to remove the corrosion from them. I started to work on it with a Dremel and wire wheel. It's almost polishing the surface and I want to make sure I'm not hurting it.

They are anodized and the finish is designed to resist corrosion. But they get dirty and have to be cleaned. I know some guys have stripped them and powder coated, but leaving them shiny I don't know if that won't cause more corrosion susceptibility or not.

If the corrosion is bad and you end up removing most of the anodized finish, it will corrode more easily. It would probably be easiest to remove and blast then paint or you might be able to reanodize them. I wonder what that would cost. I also wonder if they could be anodized with the colors I have seen on other performance parts.
