LS2000 Fuel Filter Mod / Upgrade

Hey folks, I have a 1999 LS2000 which I recently purchased. Although the boat runs just fine, the fuel system has had a lot of mods done to it as you can see in the attached pics. An electric fuel pump has been installed which is routed thru a large cylinder with filters attached (Fuel/Water Separator?) which I assume is to reduce the inline fuel pressure from the electric fuel pump going to the carbs? The engines run just fine!

I would like to change the fuel filters, but would like opinions on if this setup is safe or should I remove and go to OEM? Thanks!

That tank after the fuel pump is a air separator.
