Misq. netting and some sly nylon tarps draped over the bimini should do the trick (pictures later).

I don’t do this very often and was looking for some quick and easy (storable) way to do an overnight spontaneous or otherwise

my wife and I do it rather frequently. What you have done will work if there is no rain and the weather is relatively warm. We usually put the cushions on the bow and put on the bow cover. It is stay warm and it is still dark when the sun comes out in the morning.
 
We have been wanting to do this, working on making some mosquito netting that will fit over the whole boat. When you put in the filler cushions in the front it is just like one big bed
 
I found that a twin air mattress fit perfectly between the seats in the cockpit of the boat. We've had three people sleeping on my boat multiple times.

I use light weight hiking tarps that can be configured into tents to tent the whole boat. I've also just used mosquito netting from the tower when by myself.

@Scuba_ref can you post a link to the tarps you use? I've been wanting a custom tent cover but tarping looks pretty easy and much cheaper.
