Is the Blue product recommended for steering upgrades such as Mega Fangs or Thrust vectors or is the stronger red needed?
if I use the red can it be removed if needed in the future?

Red can be removed by heating up the part with a heat gun or small torch
 
Blue is adequate for the fins. I would not use red on anything that I may need to remove unless called for by the manufacturer.
 
I have been having issues with the screws holding up my tower speakers coming loose. I was using some purple loctite that I had and it helped, but I still almost dropped a speaker on my 2 hour drive to the cabin. I used the blue this time and after a trip to the cabin, some boating and back plus about 4 hours of rough boating on the local lakes they are still solid. I was told that red is quite permanent and is a bitch to get undone. I would go with the blue.
 
I believe @JetBoatPilot recommends (and provides) red for his products.

Full disclosure: I use blue because I'd like to be able to get them apart someday if the need arises.

That said, I'm in the habit of making a pass over all the nuts and bolts back there a couple times every summer just to be sure. (Plus, I get to fool around with the boat for a few minutes - even if it is on the trailer.)

We use red on bolts that are critical for safety, such as bottom and top pivot bolts for the nozzle. We use blue everywhere else. The red can be removed if you don't go heavy with it when applying it. Also if you use heat you can get it off if someone has gone heavy with it.
