Scarab 195 engine temp issue

Hello everyone, I have a Scarab 195 that is still in the break-in period. The engine temp gauge has been bouncing all over. Literally going from 140 to 340. No warning lights or “beeps.” Anyone ever experienced something like this? No warning lights or “beeps.”
