Replacing my steering cables, what do you guys use to seal the through hull fitting?

Do I use #m 4200, 4800, 5200 or just normal silicone?

3M 4200. The 5200 is more of a permanent application and your cables are likely to need to be done again at some point. Of course, it's just sealing so even 100% silicone would likely work fine too. Either way, make sure you clean the areas real good first.

I used Lifecaulk which is also for underwater use.

Sikaflex should also do the trick then

Sure, as long as it's the marine version with UV protection and approved for use above and below the waterline.
