Smoked Trout

It's been a long week, but finally got to my trout (caught in White River, AR).
I love smoked fish in general, but smoked trout is hard to beat!

Starts with a few hours of brine:

Then comes critical step - drying stack (to develop "pelicle").

(Don't laugh) for hot weather days I have a little outdoor "system" set up, it takes about 2hrs, w/a couple of turns:

...it works.
Here is that nice pelicle, developed after only 2hrs:

From there - strait into the smoker:

Ready in few hours - typically about 2hrs at ~140 followed by about 2hrs at ~175, done:
