It is the same setup as my boat, just did them and i removed the pumps which you dont have to do to accomplish the job and it. Start to finish it is no longer than a 4 to 5 hour retail job.
Cable assembly is no more than 500 bucks retail
These new "rack and pinion " steering cables are one piece assembly and cant be bought independently. I got mine from boats.net.
See in thd picture it isn't serviced. So you are stuck buying oem. This is the end that bolts to the underside of the helm
After doing this job once, i could do it in less than 2 hours start to finish no problem.
If is did this for a customer in my shop i would charge 400 bucks plus parts
