“Texas Style” Pork Butt

No boating today... so here’s a “Texas Style” pork butt in the works! Before anyone chimes in... I know there no such thing as “Texas Style” pork! lol just doing it with heavy black pepper and salt and a couple other things!

I have a Traeger Pro Series 22. Its incredible!!!
 
How long it take you to smoke it? Last one I did on my big green egg was about 7lbs and smoked it for 18 hours.
 
It came off looking like this! Wrapped in foil and towel in a cooler for 2 hours and then it just fell apart while shredding.

Well, funny you should ask... I put it on @275 for 5ish hours then wrapped in pink butchers paper.... after that I don't know. I ended up falling asleep and woke up at 0400 this morning in a panic!!! It ran out of pellets sometime last night and shut off. When I pulled it this morning it had cooled down pretty good but the blade bone still had quite a bit of heat in it. It still turned out good though, the meat wasn't overcooked and mushy like I was afraid it would be, the only thing that got messed up was the bark which turned out a little more "chewy" than normal which some people like anyway.

I NORMALLY wrap after about 5 hours then wait until the thermometer goes off at 198 degrees, usually another 3 or so hours. this one was taking forever for some reason that's why I fell asleep on it. lol
