The new 2021 25 foot boats look incredible! I just bought a used 2016 242 Limited SE last week and had ZERO buyers remorse until I saw the new 2021 lineup come out. After an initial review though I'm still glad I got the 2016...although these new 2021 features are great:

New Features I Like
Convertible stern seatbacks that shift forward and back for lounging
Swim up stern seating.
12" connext screen is mounted higher.
The drive stystem on the SD seems nice but honestly after a few weeks I expect to be a master at docking.

New Features I Do Not Like
The permanent bimini on the SE and SD appears smaller than 2015-2020 versions. Maybe it's easier to put up/down?
The stow away prep area. I'd rather have more wrap around seating in back.
The caramel interior color scheme. I know that's the high end look now but that will date quickly. Simple whites, grays and blues are always timeless.
25 foot boat/trailer dry weight keeps increasing to point where you need heavy duty tow vehicle.
Prices have jumped about $6k across all models and soon these will be $100k+ plus boats like the top end wake boats (without many new features)

Bottom Line
I like the new 2021 25s but for the money I prefer the 24s from 2015-2020. Find the color scheme and trim you like in those and get it used.

Side note....I'm a first time boat owner. The Yamaha 2015+ 24 and 25 foot boats are the best boats out there and check every single box for me. I looked at other IO and jet boats and the clean expansive layout, design and ride quality is amazing. I can comfortably fit 10 adults in my boat. The back transom on Yamaha is what sold me and so far we hang out there allllll the time. If you want to wake surf get the X. If not, I recommend the SE or SD because the permanent bimini cage acts like a pergola when the top's down and provides a TON of shade when top's up (I can get top up in 5 minutes) which is appreciated by my Irish family even in the northern states. I also love how the cage allows for up high stability grab bar when walking around and boat is rocking in choppy water. I mostly use it in Lake Geneva, Wisconsin and that lake gets SO choppy with all the boats and the 24 feet handles the waves perfectly and smooths out the ride so much. And I realize everyone's budget is different but I wouldn't even look at the 19 or 21 footers...you'll get boat creep real fast...just go for the 24/25 and be happy you did! Good luck!
