I know this is probably a super simple question, but electronics are my weak spot. I want to wire my fish finder to one of the open ACC rocker switches (see the bottom switch in the photo). However, there is only one open terminal for the red wire. Where do i connect the black wire? I assume I have to pull off the black terminal and add the black wire from the electronics. Again, I am probably going to kick myself when someone shares the answer with me.

Yep, just marry your ground with the existing ground wire. (Clip off the female spade ground terminal, marry the wires, attach a new terminal, slide the new two wire female connection back on the male switch terminal)
 
The switch only connects to one leg of the 12vdc for the finder, the positive. The black wire in the switch is for the negative for the light in the switch. The negative from the fish finder can be spliced into the negative there where to goes to the terminal. If it were a larger load, or you add more electronics later, I would recommend adding a dedicated run to the battery and bus bars behind the helm.
