Chicken Scaloppini in a Lemon Sauce

Tonight I made Chicken Scaloppini served over a bed of saute spinach with mushrooms and almonds along with roasted potatoes and finished with a creamy lemon sauce. The mushrooms were cooked in a champagne vinegar and then added to the C864B73D-C611-4BEB-8AFD-6C8E8250B48E_1_201_a.jpegspinach.

That looks really tasty, i could even see the use of a few capers in that recipe. The name Scaloppini to me, suggest the chicken would be cut into rounds, perhaps with a small cookie cutter. Otherwise, thanks for making me hungry at 6am!

Caper are an excellent addition to this type of dish. I must admit I have never seen scaloppini cut into rounds However it would make for a very nice presentation
