Bleed all tuna's before put on ice/in the cooler (before it dies). It's not "required" but it will make it taste better. All fish main artery is between the bottom opening of the gills towards the lower jaw. Simple finger poke in there will pop it.

DO NOT FULLY FREEZE THE TUNA if you want to eat it as straight sushi. Thawed the meat will have a weird texture and it will only be good if cooked fully or ahi. (This rule applies to your everyday tuna, Blackfin, Skipjack etc. Yellowfin and Bluefin is a different story)

Filet and skin the tuna. Separate the shoulders (top half of the fillet) from the belly (bottom half of fillet) along the blood line and trim any of the blood line that may remain on each half of the fillet.

Sear the fillets whole at 400...approx 1 minute per side (typical triangle shaped fillets, 3 sides)

Remove filet and slice to desired thickness
