Is it possible To remove one of the engines while it’s still in the water ideally by plugging whatever needs to be plugged?
 
its possible but not advised... you will wanna plug off the fuel feed and return lines and the cooling water feed line from the jet pump, and the exhaust return line to the exhaust through hull... leaving these early boats in the water unattended is iffy in my opinion without some attention and redundancy
