I have been all over the place but this is what I have settled on to start with:
replace all 6 6.5 speakers with JL m3 6.5s, add JL MM50 tuner, add JL XDM 800x8 amp, add 1 JL M6 10" sub.

amp will be 100 x 6 for speakers and 200x1 for sub - can this be reduced for the 6 speakers ? I think rms is 60 watts max not 75. I am hoping this is good enough but in the future I could add another sub and or an extra pair of speakers in the cockpit close to where I sit (was hoping for in front of the captain seats but I don't know about mounting speakers on the black trim). I am not thinking about tower speakers at all for now. I don't care if the kids on the tube can hear music or not lol. Am I missing anything big? I can't justify M6 speakers for the cockpit price wise even though I am sure they are better

That set up will sound good IMO. The amp will not be 100w for the 6.5” at 4ohms. It will be 75w @ 14.4v and 60w @ 12.5v so your speakers will be powered appropriately.
If you have not thought of this yet, think about how you want to set up zones and if/how it can be configured with the head unit/amp selected

edit: also think about tuning and setting inputs/gains and what is required to do so.
 
thank you - I did not remember the 14.4 vs 12.5 voltage difference. I am considering putting it in myself but will probably have a pro put it in . 1st zone will be bow and cockpit , 2nd zone will be swim platform

You also want headroom. There are various rules out there but you want more than the RMS rating. I think 100w is good for 75w RMS speaker.
