I've searched but all I've come up with is just pliers or install shut off valves when being towed, which doesn't really answer my question.

My question:

If I, for some weird reason, decide I want to play around and drive with only one engine, will the other engine idling be enough to stop the backflow of water into that engine without using pliers or a shutoff valve? No more than 15 mph speeds.

Yes, with the other engine running, you’re completely fine to run as hard as you want.

I mean, @Julian gave me an ultimate squirt gun that runs on one jet pump so I plan on doing this, lol! Although, not while moving I guess!
Silly E-series can't do the fun stuff..

Correct.
When testing my L13 cones I have had the boat up to 25-30mph operating with one engine at WOT with the other one in idle - as posted somewhere else here. Zero issues, as long as the other engine can idle it prevents water ingress into the exhaust - I would still push the throttle level to open the gate (to first/second indent) on the idling engine to prevent any water pressure building up (water entering through the intakes) inside the pump at speed, but I'm sure it is not actually necessary as long as the engine is on.
