Is there any option to put a seat where the table would go? We never use the table, but could use a seat there, especially when wakesurfing on starboard side.

Is your table pole straight? Should match up with any standard seat you can buy from a vendor. I would double check the base mount to make sure it's reinforced enough, especially if the seat was to be used while underway.

Use an ice chest that can double as seat. Still not sure why Yamaha removed that seat in 2019.

I was not a fan of that when I saw it either. Seating is always a premium on smaller boats, tables not so much. Taking from @anmut 's idea, you could look at having a custom seat cushion made that would mount to a pedestal base. Keep the pedistal the same height as the rear seat cushion so it would be just like an extension of the existing cushions. Since the table is not a floor mount you would need to install the pedestal base. I would think that if the floor is strong enough to stand on it should be strong enough to put that base in the floor. Maybe @JetBoatPilot would be interested in turning the idea into a kit and selling it if it is practical and enough people are interested.
