We made these a few times last year, both on the boat and on a land-locked grill. Awesome stuff! I got the recipe from an iBoats newsletter. Supposed to be good with grouper, as well.
1/2 Cup Butter (or more, depending on how much food and how many friends)
2 tbsp finely chopped onion
2 tsp Old Bay
1/2 tsp Garlic Powder
2 tbsp Sriracha
Melt butter & mix in all ingredients. Brush on both sides prior to cooking.
Cook shrimp 3 minutes on each side brushing marinade when turned.
Grill the grouper for approximately 5 minutes per side or until they flake with a fork.
