It is the same setup as my boat, just did them and i removed the pumps which you dont have to do to accomplish the job and it. Start to finish it is no longer than a 4 to 5 hour retail job.
Cable assembly is no more than 500 bucks retail
These new "rack and pinion " steering cables are one piece assembly and cant be bought independently. I got mine from boats.net.
See in thd picture it isn't serviced. So you are stuck buying oem. This is the end that bolts to the underside of the helm
After doing this job once, i could do it in less than 2 hours start to finish no problem.
If is did this for a customer in my shop i would charge 400 bucks plus parts

I had mine replaced by a shop. Now my steering is not trimmed properly. It turns to the right very well but the left turn is not as responsive. Did you measure and reinstall your cables or adjust them after install? If so how did you trim them?
So I had them replaced by a shop and they used the OEM cables. After I put it back in the water and test drove it I found the steering was out of Trim, turning sharply to the right and half as well to the left. I returned to the dealer (not an easy ordeal) and had it re trimmed, it's now a little better but still needs more left hand steering. Is there a way to easily fix this myself?

Yes i did a final measurement which is in the service manual and adjusted the cable ends at the pump to get it exact.
With the wheel straight, cables disconnected at the nozzle, make each nozzle to the measurement, then adjust each cable to the nozzle hole.

That is because the didn't start with the cables disconnected at the nozzles and make sure the wheel is completely centered so that it has the equal amount of rotation in each direction. I payed close attention to this when i bolted the cable up to the helm. They just slammed it together and thats it

Also… so there is no adjustment needed under the helm? They were trying to unbolt the gear pack at the helm then move the nozzles to one side or the other by an inch or so and revolting the pack.

If the steering wheel doesn't end up centered after you count the rotations. Then it will have to be unbolted(4 bolts) from the helm after you find the center of the revolutions then you straighten the steering wheel and then bolt up the assembly again.
After that is done you center the nozzles.
If you have some tools and ability give me a private message and i will give you my number and walk you through it if you want.
Its all very easy to do
