All my boats have come with good trailers and making sure another one works has never been an issue

I have a Yamaha SX230 sitting on an oversized tandem axle trailer with bunks and 1 bad torsion axle

I am about to look at one with rollers

What gotchas do I look out for? Are intake grates resting a roller ever an issue?

I don't see an issue with rollers but I would not have them under the intake grates. Is there a possibility of switching the trailer to bunks?

Go with the mainstream. Bunks and cheap and easy, and if you spray them with silicone they are pretty slick. Pun intended. Less maintenance=more boat time.
