The Gallette leftovers are delicious but…

We had a lavender themed loaf tonight, fresh warm bread, WOW!
 
These loaves have been great. Nearly one a week all Winter.

Could you share receipe.
Flour to water ratio
Which yeast do you use and what method do you add yeast.

I like proofing my yeast to make sure it works but your final product looks airy and crunchy.

Are you using the cast iron pot?

This is the pot we use. Anything bigger or smaller will change the size of the boule.
