24 hours before smoking, pull the skin and lather in mustard. Then generously sprinkle your favorite rib rub (mine is bod Byron's butt rub).

Place ribs on smoker at 225-250. I turn every 30 minutes because I enjoy telling the wife I am smoking meat and can not be disturbed.

After three or so hours, or 8 to 10 beers, the ribs should be done. I typically try to rip the ribs apart with my hands (and a glove) to determine if they are done. If they tear like paper, they are done.

At that point, I lacquer them with a sauce (my favorite is blues hog). I then torch them to crystalize the sauce. 5 minutes later, I do the same thing to the other side.

I am interested in others methods on ribs as I am constantly searching for the ultimate rib.

I like to marinade ribs in beer, apply a rib rub and smoke for 24 hours. They come out so tender that the rack often tears when you try to pick it up. If you have eaten ribs at Texas Roadhouse, this is the method they use.

Over the 4th a friend invited us over for fried ribs. He sliced the rack into individual ribs, deep fried them in peanut oil then sprinkled them with Tony Chachere's Seasoning. They tasted amazing and were quick to prepare.

I like the idea of torching the ribs after putting on the sauce. I smoke for 3 hours but I cook them for much longer than that (8 hours). I have to try using my turkey fryer to see how ribs come out since I am sure they are done in 1/2 hour.
 
I use the 3-2-1 philosophy. Room temp ribs coated in my rub recipe. 3 hours at 225 on the smoker with heavy smoke. After 3 hours I lay out a big piece of heavy duty tin foil with a generous amount of brown sugar and butter. Wrap the ribs and back on the smoker for 2 hours. I then unwrap the ribs and let them go for one more hour still at 225. If I am going to use sauce I add it after they are done and they go one the bbq as hot as it will go for about a minute.
