Can anyone recommend how to mount an amp here? 2019 212x and the area is not flat.

You could cut different size pieces of starboard and use 5200 to attach them to fiberglass behind carpet. Once set you can mount amp to them using screws. So basically make little mounting blocks
 
Like you may need a 3" thick piece at the top, and a 3/4" piece at the bottom to make amp mount flat. Hope that makes sense
