All I did was check the pump strainer and flush her out on the hose for 20mins or so. Never found a problem. Never happened again. It's a mystery, I guess.

I know this is an old thread but still thought I would post to help future jetboaters. I had a similar issue when I first bought my boat. Overtemp would come and go. Never would do it when I returned it to the dealer. Below is what I ended up finding when installing my IC. The way the hoses were routed from the factory caused a kink. Definitely something to look at.

@JerryG is that under the water Box? Red line goes to motor? Is that the line we are supposed to put a check valve on in case we are towed? I removed those little white inspection covers under the swim platform but I guess you have to remove the panel to get access and to see that line.

The red one goes to the fresh water flush. The black single line is coming from the jet pump then T's to the motor and IC (before i ran a dedicated line) I actually had two kinks but I just zoomed in on the pic and you can only see the red one (oops) And yes this is accessible if you remove the manhole covers under the rear wet storage area.
Not sure whether this is the line to plug or not while towing but I would think yes. Most importantly though, I would guess, would be the need for a plug for the exhaust. My Seadoo jet boat required the exhaust to be plugged with a large bung
