I wash the boat, and drain as much as I can but I have about 2 gallons of water coming out of the drain in the ski locker.

I have lifted the fuel tank lid and found no drain going TO it but drain going out to the engine bay.

so does the water from the ski locker go below the fuel tank, below the engine, and go straight to the bilge on under the swim platform?!

Yes! The bilge goes from the bow to the strern, but you can only access it from the stern and the small hole where the bilge pump is installed. There's also a drain plug between the fuel tank compartment and the engine compartment.

We lift the bow as much as possible or park on a slope when washing the interior.

Yes! You will notice that the bilge pump in the engine compartment is mounted over a hole to the real bilge below. Water accumulates below and rises to be pumped out by the bilge pump.

but the bilge pump is infront of the engine... FAR from the actual bilge...which is my issue. I always have to pump out the water through the ski locker drain not the actual drain in the rear...

The real bilge area runs from the anchor locker then under the ski locker, where the hull is the deepest and under the fuel tank and the engine compartment to the bilge plug. There are drains in all these compartments, except anchor locker, that drain to the bilge The hull area under the ski locker holds most of the water when the boat is level on the trailer or while afloat in a slip. You will never get all the water out while in a slip because the bilge pump is too high off the hull, other than using a shop vac or an oil extractor. On land you can just jack you trailer up high and pull the plug. There is a way to get some out when the bow is at it's highest just before you get on plane, but that becomes less effective when the bilge pump is in front of the engine and not at the back, as all the water rushes back when the bow is high.

What are you guys using to get the water out from under your locker? When my boat is in a slip or on the lift I can’t get all the water to drain out.

An oil extractor put down the ski locker drain will get most of it, depending on pitch of the hull. I have also used a wet or dry shop vac with a small tube taped to the hose.
