I have the OEM Garelick Bracket on the port side, and I'd like to add one to the starboard side (mirror image to the port side). Also considering a center location. Has anyone done this? Is there access to the interior?

I haven't, but I don't think access is your largest issue. You will need the fiberglass thick enough and reinforced. I suspect there is a plate behind the stock one...

Otherwise you risk tearing a hole in your hull when someone leans on something attached to the mount.
 
This is the kit from JEWLSCUSTOMS.COM. It has backplate but not sure if it's same as OEM. I guess I'll just see if I can get eyes on the stock one's backing plate and see if this one is equal or better.

Jewls makes good accessories, you should be good. Access shouldn't be an issue. for the starboard side, remove the cup holder.

Yes, that looks like a good sized back plate. That is key.
