Trying to see if I could mount a Minn Kota MK80EM to a Yamaha FSH 190. Some lakes dont allow motors over 10 hp around here but will allow you to use your trolling motor. Though it may be interesting to see if you could mount one of these and use your steering wheel to control direction and mount the speed control on center console. Any thoughts? Almost makes wish I bought an outboard.

I’m not understanding the connection between mounting a trolling motor and wishing you had bought an outboard?

That specific trolling motor mounts directly to the cavitation plate of the outboard. The standard bow mount trolling motors work great. Maybe consider that option..?
