Hi

I am a newb compared to others who post here on regular basis but I want to find a way to contribute .
I got "What's for Dinner" thread from other forum I was on for years and hope to be long time member of JB.net
Figured thread where we all can post and keep all of us home cooks something to look at everyday and keep our minds of what is happening on land.

Ill start thread and add previous meals I have made.

Today I made chicken strips with EVOO, salt/pepper, in marinade from Lawry's Garlic and herb and in the oven at 350 for ~45mins
Thin sliced potatoes with EVVO, salt/pepper, Chile Limon spice
Gnocchi. I boiled them with salt, oregano and EVVO. Used some of that liquid and mixed in butter/EVVO and threw it in frying pan to saute. Covered it with bacon bits and parmesan cheese
Pillsbury croissant to top it off

Random BBQ using Pizza oven

I use EVOO, salt/pepper/ chile lemon seasoning. Theres another seasoning I use called Elote. Goes great with the corn too
Steaks were flank style with same salt/pepper, EVOO, dry steak seasoning.
Au gratin potatoes with panko breadcrumbs
I always try to make bread. Use salt, sugar, dry yeast, APF or Bread Flour, EVVO, honey sometimes or Dukkah spice blend mixed in dough for flavor

Pizza day

We go through ~20 pizzas with all the topping you can think off.
Dough is salt, sugar, yeast, EVVO. Sometimes I add honey to dough too.

I fire oven and get it over 500F. I pre cook crusts with EVVO and parmesan cheese before cooking a second time with the toppings.
The Egg pizza are the best. Or all the meats with onions.

To top it off I do a Nutella Marshmallow pizza. The kids tear that one up!

Not really dinner but breakfast burritos for the kids.

I make two batches. One with egg's and other with out egg's.
It has sausage, salami, ham, pancetta, pepperoni, onions and shredded cheese.

After they are rolled up, in the freezer they go until I need them. Pop them in air fryer covered in aluminum foil at 375 for 15 mins.

Best food prep ever.

These are the best tacos. They are sweet, spicy, and have a ton of flavor.

Turkey tacos
Cayenne
Cumin
Garlic powder
Onion powder
Paprika
Oregano
Brown Sugar
Apple Cider Vinegar
Tomatoes cooked with the turkey

Toppings:
Lettuce
Diced avocado
Cheese

The corn tortilla is brushed with oil then baked, then coated with spicy peach mango sauce that a friend made

The spanish rice is browned in oil, seasoned with sazon, azafron, tomato sauce, and then simmered with chicken stock. I have big frozen bags of carrots, peas, and green beans that I boil and add with the rice.

Can't forget the four cheese Texas toast

Normally cook for 3 to 4
I count my 13 and 11 year old as adult serving.
I cook in old cuban style

Today's dinner.

2 packages of Gnocchi the sauce I made with sauteed diced onions added small pieces of sliced pancetta with butter, EVOO and squeezed lime. Added some oregano seasoned water I used to boil gnocchi. Topped of parmesan cheese.

Chicken breast was seasoned with EVOO salt,pepper and lawreys herb and garlic dressing. Squeezed two limes and left peels at bottom of pan.
Cooked in over 375 about 45 mins.

I know I did good when there's zero leftovers.

Had a mediterranean barbecue yesterday.

Chicken Skewers:

Boneless chicken cut thin
Cumin
Turmuric
Coriander
Smoked Paprika
Minced Ginger
Minced Garlic
Salt+Pepper
Avocado Oil
Put on the skewer with some red or green pepper
Marinate a few hours

Meatballs:

Ground beef
Cumin
Garlic Powder
Red Pepper Flakes
Salt+Pepper
Avocado Oil
then form meatballs and put a piece of feta cheese inside

The meatballs are great with tzatziki but the grocery store didnt have it. I dipped the meatballs in the hummus instead. The pita/naan is also a great snack with the hummus.

I wouldn't recommend the chicken if you have kids - I think the turmuric could stain some things! I need to see if it will come out of the seadek on the swim platform. This recipe is from "Sam the Cooking Guy" on youtube.

Yeah on my AR192, I put a table and a grill this year. Definitely going to make it again because prep time is quick maybe 15 minutes.

I hope you got a good tip.

There were threads about fires staring from grills and how people pour water on it and make it worse. It would scare me if I got a grease fire

Have extinguisher handy. One guy was "I only will grill on beach".

It's really important to clean the grill thoroughly after each use to prevent fires. I have the magma grill (link below) and it's really easy to clean. Before cooking, I spray the entire inside of the grill with grill cooking spray. To clean I fill the sink with water+degreaser, disassemble the grill (10 seconds), and soak it all in the sink. Then use a copper scouring pad to break down the grease. I could clean this grill in 5-10 minutes and it looks new everytime. Probably I could skip the degreaser, but I like a really clean grill.

Oh yes the recipe! Here it is
I start with flour and butter in saucepan. When flour has nutty flavor, butter is melted start adding heavy cream 1/2 cup till start thickening repeat, then a whole cup and add cheese, hot sauce. Note: I boil macaroni for 7 minutes and purposely cook al dente before mixing. Then transfer to cast iron skillet and place in Traeger
 
2 hours, to go till next step, going to store to get rolls and slaw.
