My thoughts regarding the grease was similar. Not a true water barrier but if packed well enough it would prevent intrusion.
 
Ooops too much is just as bad. I tried to grease it after replacing and it wont allow more than a few pumps. Where should it overflow to?
 
I beleive too much grease results in the seal blowing out and grease showing on the boat side of the bearing.
