About how many hours does it take for the stock pumps wear enough to need replacement?

Unless the bearings go bad or you get trash in the pump they don't wear so to speak, they swell up under the liner and get high spots those make contact with the impeller they are obvious as they turn into dark spots on the liners , This is most common in salt water.

In fresh water - probably forever, or - until you find some rocks, lol.
The plastic (delrin polymer?) inserts are fantastic - for reasons @OperationROL and @Cobra Jet Steering LLC already mentioned, but do require a different wear ring (pump segment). Very easy swap, the freezer trick is a must.
I have had those in my 190 and NEVER experienced any issues with inserts getting loose, just the opposite actually - you have to cut/chisel them out to change them.
It's on my to do list at some point, because they do make the boat quieter for sure.
