i purchased a Stoltz RP-434 for my 2022 210 FSH
Should I change the factory roller out to the Stoltz right there at the dealer when I pick up my boat?

I have about a two hour drive from dealer to home.
 
On a more serious note, you have to see how your boat sits on your trailer, lots of yamahas sit too far foward so you might have to move it back a few inches changed it when you do that, you will need tools.

Change it at the dealer. Should not take long. I marred my boat on way home from dealer on a 15 mile trip. If you have the roller already no reason not to put it on. Have the dealer do it or at least help you.
 
Do it at the dealer. Just have someone sit on the swim platform to get the weight off the bow and you should be able to change it right on the trailer.
 
Another vote for “at the dealer” - that’s what I did. They even had one of the mechanics help me with it - by blocking the bow with wooden blocks to the floor and we slowly lowered the tongue of the trailer. Once the boat was not making contact with the OEM roller, we swapped it out together. 5 minute job maybe. I had a 2 hour drive too and didn’t want to risk it.
