Here's to you and your bunch and hopes for a fantastic Memorial Day weekend!! Don't know what everyone else is up to but I will be smoking some baby backs, and tri-tips while enjoying beautiful Table Rock Lake!! Friends, family and cold beverages...don't get much better!!! Have a good one and be careful out there...if you can't be careful name it after me!!! :D

It's where I'll be Monday most likely. Saturday is putting the dock in at friends cottage that we use and abuse all summer long.

If I can convince my wife to make the trip it would be fun. We could play tag with our boats out on the water :)

Right back at ya @Jim Robeson . I have to work Saturday night thru Monday. So my holiday will consist of Friday night and Saturday. The kids were supposed to come up, so I am doing two pork butts as we speak. But they are going to no show us, because we told them not to bring the dog. We love the dogs, but 4 hours only on the boat, lunch, and not much else doesn't leave time to chase them when we can't get to shore on this lake. Oh well...more pork for me! Happy holiday!
 
Pork butt, that is something I haven't tried yet. You use one of eggs don't you? I use an indirect heat smoker...what kind of wood do you like to use @txav8r? I like a little hickory and some cherry.
 
I did the butts with a little peach and apple mixed in with the lump charcoal. The lump is mixed and representative of the woods near a given manufacturer. My favorite lump is Rockwood, a product from up around St. Louis! Excellent lump and very little trash, with good sized chunks. Burns nice and doesn't all burn up like some of the cheaper stuff. So I think that lump is comprised of oak, hickory, pecan, cherry, etc. But you use lump hardwood charcoal in an egg instead of wood. I cooked those butts for 8 hours and 6 minutes, the first hour at an average of 225F and I deliberately let it climb to 295F for the remainder so I would have it done by dinner. I had two butts on for the cook. And with an egg, it is easy to maintain heat consistently without adding any additional fuel. Oh, if I am doing brisket, steaks, or burgers, I like to use mesquite for my smoke.
 
Man, that sounds good!! I keep my smoker at 250F for the duration. For Ribs I will cook uncovered for about 2 hours then wrap them for another 3 hours. For tri-tips I will go about an hour and a half then wrap them for another two hours. I will use a little apple juice and a beer to keep the meat somewhat moist until I wrap them. Haven't used mesquite much but have used cherry, apple and hickory after soaking them in water for several hours. Of course this can only be done correctly with the right amount of cold beverages on hand!!
 
Or in my case...a really good wine and a cigar for the cook! You can't cheat as easy with other meats, but with a butt, they are so forgiving, ramping up to 300F won't hurt a thing.
