Okay, two hours in:
Spritz with Apple juice and apple cider vinegar 50/50 mixture, and butter. Every 45 minutes.

Internal temp 150, now going to place in foil pan add brown sugar, honey, more butter. Then wrap tight with foil, placed temp probe again, will take off grill at 205.

Okay, 205 degrees reached, next step: collect rendered juices for later use and reseal tin foil let rest for 1 hour.

We were out for 7 hours yesterday and had a colombian bbq. Unfortunately no morcilla (blood sausage) it seems like i'm the only person that likes it lol. So the girls seasoned some flank steak and was a big hit with everyone at the sandbar. The last batch we put corona on top. Pictures are stills from videos we took.

Last night was Publix Chicken Cordon Bleu with Gnocchi with pancetta in EVOO and parmesan. Can't forget the biscuit.

Went pizza crazy and make a nice focaccia type bread in cast iron skillet.

Made 5 meat lovers with onion.
3 sausage and ham with cooked egg.
2 Balsamic with fresh mozzarella and tomatoes
1 meat leftover with Balsamic.

Have 4 precooked pizza bottom left to make some in regular oven for the week.

I went to the latin market and finally found peruvian aji amarillo sauce! On sale for a big bottle only $3. So I tried making aji de gallina for the 1st time. It came out great! Its shredded chicken in aji sauce (peruvian aji peppers, walnuts, evaporated milk, white bread garlic, garlic, onion, and oil) on the side is boiled yellow potatoes, rice, hard boiled egg, and a olive. This is hows its traditionally served.

So a friend saw this on Instagram and says "I love peruvian food! Did you try tallarines verdes?" No I never tried it! So I googled it.

This sauce is made with spinach, basil, white cheese (I used feta), oil, walnuts, and evaporated milk. Then I used large pasta shells. For protein, I found steak on sale for $3/lb! Wow. Grabbed 2 of those and pan seared it with coarse salt and fresh ground pepper. I topped the pasta with crumbled feta and fresh ground pepper.

I was introduced to this by an ecuadorian girl that always prepares steak for my boat. I went to the local latin market and got the following ingredients. 4lb of sirloin tips, 1tbsp chimichurri, 1tbsp seasoning, 1/4 of oil. The downside, be careful of that oil! Stains everything! Otherwise its delicious

This was delicious. I made a burger, stuffed it with Mac n cheese and wrapped it in bacon. Credit goes to The Cooking Guy on youtube. Recipe is called beer can stuffed burger
