For the first time in along time I did a Boston Butt on my MAK 2 Star. It worked flawlessly. I set it at 250 took it off 12 hours later with an internal temperature of 196.View attachment 235032View attachment 235033View attachment 235034

I don't have as fancy a grill as yours, but we do a few of these each year on my old Traegers. I run mine at 225 for 3 hours, and then bump it up to 250, and I pull it off at 205. I found that injecting is also a great way to add flavor and moisture, thus far, the teriyaki marinade has been the hands down favorite. Kinder Teriyaki marinade, thinned with apple juice for easier injecting.

Have you considered a wireless temp probe? My neighbor got the Chef IQ set last year as a present from his mother-in-law, she got the 2-pack from Costco. He liked it so well, I had him show me how it worked, and I ended up getting the same set at Costco. The 2-pack runs $100 from there, and they had the best price at the time. I'd shop around, but Costco still has that same deal.

I get the sense that when @drewkaree tells you to do a search on "wireless probe" that you're being set up for a disturbing and possibly scarring set of results.
