I just picked up an entire loin of new york strips cut into 1.5" steaks. 6.50 a pound...great deal. I need to vacuum pack them for sous vide...I bought the montreal steak seasoning at sams. They will be ready to go, just drop them into the bath for a few hours then hit them with the sear station on my weber...Can't wait!!

Agreed, I'm a dry rub fan only.. shout out to @waterboy for knocking it out of the park last night !!

How do you cook the flank on a gas grill?

High heat to sear and cook to med rare. Slice in thin strips across the grain.

I like that combination as well, mostly I default to the seasoned salt. Now one thing I really love is some Prime Rib, cooked medium, and good au jus!! A local Indian Casino has all you can eat prime rib for 16 bucks on Saturday Nights, me and my buddy Shawn eat two to three slabs each LOL.
 
I'm really surprised I've heard no mention of Dale's Marinade in this thread yet. Or Flavor God.

Sous Vide....OMGoodness it makes insane steaks. Anova Immersion Cooker is worth a google.

Prime Rib Sous Vide style...Best piece of meat I ever put in my belly!
Forgot to mention, the girls at this Easter dinner had to microwave it so it wasn't pink.....Pffftttt.....GIRLS!

@Big Shasta, I checked out the Sous Vide immersion cooker. Can you just get the slim version that I see on Amazon and then cook a prime rib in a stock pot? How is this different than a slow cooker/crock pot. This sounds like Xmas dinner, fill me in on what I need please

I don't know what the slim version is, I have the Anova Immersion cooker:

Skip the Bluetooth and just get the wifi version, I don't like that feature. It links to an app but it isn't really very helpful.

It's awesome....You can use it in a pot on the counter. It's precision temp which is the key. It cooks to a certain doneness based on time ....if you want a rare steak, set it to 130-135 and cook that steak for 2 hours or 10 hours, it will never get more done, just more tender. You want to put a sear on the outside after it's done though. You can do that on the grill or a cast iron skillet...or even with a propane torch.....that's what I did for the prime rib I posted. It was weird torching the meat but it worked great.. I absolutely love chicken breasts in it. I use a vacuum sealer but you can use ziplock bags too, just get all the air out so it doesn't float. Put in the chicken, slowly lower it into the water until all the air is pushed out and zip it up.
 
Not my favorite cut (filet mignon) but will have to do :D

Its been a texas barBque around here (meat with a side of meat)

We're <3 months till huntin season and we havent gone thru much of last years harvest.....so we're cookin like crazy!
