I filled my tank before my maiden voyage on our new 2021 sx195 and have just over 3 hours on it. It says we’ve used 7.1 gallons but the gauge still says 100%. Is this normal or is my fuel gauge broken ?
I've noticed my fuel gauge takes a while to update. Are you checking it on the trailer or on the water? Lower the trailer down, cycle the key and recheck it.
In water and on the trailer. It literally just hasn’t left 100% yet which is a bit scary considering it has 3 hours on it and if I’m down 7 gallons of 40 it should be more like 80% or so.

Have the dealer check it when you go in for your next service. Open the fuel hatch and make sure everything is plugged in. An open circuit may default to 100%....not sure about that though. Or unplug the level sensor and see what the gauge does. Not sure how Yamaha sets up their fuel circuits, but unplug it and see if the gauge changes. The pump and sensor MAY be in the same connector, but you should see the gauge change. Cycle the key, it may need to update.
There are several other threads going on this issue. @fatboyroy has been having issues as well on his 190 FSH. In that discussion it has been determined that the trip meter fuel used is pretty accurate, within a gallon, so just keep an eye on that as you wait for the main gauge to come off of 100%
