That’s stellar! I have the 5.7 Hemi and I get about 17 MPG daily driving. Usually around 11 MPG towing my 242.It is - I get 23-25 daily driving and I have a lead foot. Probably would get high 20's if i drove conservatively.
Towing my AR210 on an aluminum trailer I get about 16-18mpg. I haven't put many miles towing yet so thats a very limited sample and it was on country roads. I'll be taking to bimini in June so that'll be the real test. I expect 18+ on the highway.

I too enjoyed a lowered Tow Rig for awhile. Came from the factory with rear air bags. Was lowered a shade over 2in in the front with a set of coilovers, and the rear had a custom height sensor rod and drop shocks.Yes it is, lol.
I have about 1 1/2 in drop using Road Magnet springs. I kept factory shocks in the front but went with aftermarket Bilstein in the rears. I also added Airlift 1000 bags in the rear to help when towing the boat.

What engine did you pick? We have a '19 Expedition that only comes with the 3.5 Eco and it handles and pulls our boat very well. I'm impressed with it almost every time I get to drive it.
