Yeah, I wish. The pork bellys on these feral hogs don’t make for good bacon. I just dropped them at Kubys meat processing in Dallas. Famous joint for meat processing. I’m getting 20 lbs mild Italian sausage, 30 pounds brats, 10 pounds of bulk mild breakfast sausage, and the rest is everyone’s favorite………smoked jalapeño cheddar sausage! I have people begging for that shit!

Surprised you don’t make your own sausages. It’s fairly easy and plenty of access to good seasonings.
Here is some beef jerky that I made over the weekend. Hoping to find cheap pork or get my own hog soon to make our own sausages and bacon.

Do you have a recipe for Polish sausage? My neighbor up north makes the trip down to the big city to buy Polish, and he's been trying his hand at it, but he's not been happy with the recipes he's found.

I've got a grinder and the sausage horns, but I've never tried my hand at Polish sausage.

Just saw this on my local news. For context the bay bridge is the main artery into and out of San Francisco. Protesters blocked all lanes heading into SF this morning for four hours. Some of them parked their cars, got out, threw their car keys into the bay and locked themselves to each other. Thankfully I wasn’t stuck in this mess but I know people who are/were. I don’t understand the rationale of protesters if they just blew my schedule I won’t be taking up/supporting their cause. View attachment 211731

Think this one was the Israel/Palestine war. I have no problem with protesting, but there's no need to screw over innocent people that have absolutely nothing to do with what is going on half a world away. Go protest at an embassy or something. Yell at the appropriate people.

I didn’t mean to raise the political aspect of this just the fact that many people just trying to get to work today were inconvenienced in a big way from doing so. That said it would probably be appropriate to delete all responses to my original post.

Kubys is the bomb in Dallas. They have been around for a long time so there’s no way I’m gonna make it better than them. Plus…….all that meat processing is going on my expense report. I give most of the jalapeño cheddar to customers.

To some it’s a small town but I moved down here from a small town of 2300 people so it’s a tad bigger but your right, these events have a small
town feel.
