We are looking for a mooring cover for a 2011 Yamaha AR210 that doesn't have the ratchet in the back. Does it exist?
 
If your problem is avoiding access to stern because you are on a lift or floating dock, I rarely use the ratchets on my cover while it is on the boat. I set the cover snugness on terra firma and just use the regular snaps/velcro when installing the cover while the boat is on the lift. I am in a high wind area and have rarely needed to ratchet the cover while it is on the lift.
 
I got used to doing the stern ratchets on my 230. Pull the cover over, crank the ratchet a few times while kneeling on the cover and done.

Great answer! So simple, why didn't I think of that?

Thank you for the suggestion. That is how I have done it in the past but just had my 3rd shoulder surgery and need a new strategy. I am going to try LLMMCT's idea.
