I have an LS2000 and I'll spare the story but the clean out tray is gone.

Is it needed for safety or can I do without?

Never seen this question before! (and we'll still want to hear the story of how you lost the tray!)

My primary concerns would be:
  1. Clean out hatch switches.....I can't recall on my LX210....but aren't they part of the tray...without the tray, you'll have to bypass the cutoff switches.
  2. Without the tray, water washing over the back deck will go straight to the bilge ... but you can avoid that by not doing hard slow downs.....something to watch for.

One of the plugs blew out and knocked open the hatch when we were at sea and the tray flew out into the ocean. We almost sank but were rescued before that happened but could not retrieve the tray. The switches were never a factor and there seems to be no source to find a replacement tray. UGH

Can you make a new tray with a 3D printer or out of wood?

Too big to print I imagine and no access to one here in Puerto Rico. Might HAVE to try and get one made from wood if I cant find a replacement. Here is what it looked like.
Given how hard that will be to find, I'd make one out of wood and include an inspection hatch in it. Also, dont forget to seal the hose up that leads to that drain!

I’d cut a piece of 1/4” ply to the right shape and fiberglass both sides. Add some kayak hatches above the clean outs for quick access.

Shouldn’t be too hard mount the safety switches and make a fitting for the drain. I’d add the best gasket I could find or use silicone under the plywood to keep water out of the bilge.

Make a mold out of foam (easy to shape) then fiberglass it. Have any surfboard shops in the area?

Agree I’d go the fiberglass route over wood.

Looks like the hatch part number is F0R-U518B-13-00 but it’s discontinued.

Other option would be to see if you can hit some junkyards or eBay or something and pick up a wrecked one cheap that still has that part intact...
