BBQ Bacon Rolls

Two chipotle cheese sticks.
 
Need a little more detail....ingredients...

Can't go wrong with anything bacon wrapped!!!
 
OK. Six pieces of really good bacon from the local butcher. It is just extra lean ground beef with my standard BBQ rub that I use for ribs in the smoker and two Kraft Chipotle string cheese sticks.

I purchased a bamboo sushi roller on Amazon for $7 and it fits 6 pieces of bacon exactly.

Once rolled they go on the charcoal grill with indirect heat for 20 minutes with the cover on. Then brushed on BBQ sauce both sides and 10 more minutes cover on, one more application of sauce and 5 more minutes on the grill. I brought them in and let them cool for a few minutes and cut them into 3/4" discs, like sushi, with my sharpest knife. They were a huge hit.
